What is the Ray Peat Carrot Salad?
If you haven’t heard of Dr Ray Peat, he’s an endocrine physiologist and has dedicated his life to understanding exactly how hormones work, which often goes against the grain in the medical world.
The Ray Peat Carrot Salad helps to eliminate estrogen, lower serotonin, reduce inflammation, helps with weight loss and helps excrete endotoxins from the body. Pretty amazing right?
What are the ingredients of the Ray Peat Carrot Salad?
The best thing about this raw carrot salad is that it doesn’t contain many ingredients and is super cheap to make! The salad has carrots, coconut oil, apple cider vinegar and salt. That’s it!
Carrots
Carrots contain fiber that doesn’t feed the bacteria and allows excess estrogen, serotonin and histamines to bind to it and then be excreted from the body.
Estrogen is something that we all need but when we are in estrogen dominance, there are other issues that may arise. These can include skin conditions, polycystic ovarian syndrome, infertility, weight gain, cellulite, anxiety and depression.
Coconut Oil
Coconut oil is saturated fat, and when eating pro-metabolically, it’s important to decrease polyunsaturated fats (PUFAs) and make sure we are replacing them with saturated fat. This is a great way to get some more saturated fat in your diet.
The medium chain fats within the coconut oil may also help improve the metabolism. You could replace the coconut oil with MCT oil if you prefer.
Apple Cider Vinegar
Apple cider vinegar (with the mother) is added for taste but it also has a mild anti-microbial effect on the intestines.
Salt
Salt is also added for taste but it is important to be getting adequate salt in your diet. We are often told that salt is ‘bad’ but in reality, we need to be getting enough. If you are eating loads of processed foods then you would be getting more than enough but if eating fresh and seasonal foods with minimally processed foods, then the salt will need to be added!
Inadequate salt can affect the thyroid and metabolism, especially the hormone aldosterone. The adrenal cocktail is another way of getting salt (and magnesium) in.

Ok, so we know why we need it, let’s get to making it! It’s so easy so there’s no excuse for not including it in your daily routine! If you are really strapped for time (or you don’t like the salad) then eating a raw carrot is just fine as well!
Pay Peat Carrot Salad
Ingredients:
1 raw carrot
1 Tbsp melted coconut oil (or MCT oil)
1 Tbsp apple cider vinegar (with the mother)
Salt to taste
Method:
- Grate the grate lengthwise.
- Add the oil, vinegar and salt.
- Mix well.
- Enjoy!
